Apricot Bliss Balls (Nut Free)

Makes 20 Balls I 358 kjs (85 cal) per ball

 

INGREDIENTS

1 cup dried apricots

2 tbsp honey (warmed)

1 cup traditional rolled oats

¼ cup coconut cream

½ cup desiccated coconut, and extra for rolling

           

INSTRUCTION

1.     Place apricots, honey, oats, coconut cream, and coconut in a food processor. Process until well combined and comes together.

2.     Using damp hands, roll mixture into balls, 3cm in diameter (or 20 grams) and roll in coconut. Then refrigerate until set.
