Bacon, Cashew and Green Bean Salad

INGREDIENTS

1 Red Capiscum, deseeded & chopped

6 Short Cut Bacon, rind removed, chopped

1/2 cup Cashews, salt free

4 cups Frozen Green Beans

INSTRUCTIONS

  1. Heat a non-stick large frying pan over medium-high heat. Cook the  bacon for 2 mins. Then add cashews and cook for a further 2-3 minutes.
     

  2. Add the capsicum and green beans, stirring until green beans are heated through and the bacon is golden and crisp.
     

  3. To serve, divide evenly between 4 plates
