Smashed Bean & Pea Dip

1 avocado

120g frozen peas

120g frozen broad beans

2 gloves garlic, crushed

2 tbsp lemon juice

1 shallot, white part sliced

50g feta

pinch chilli flakes (optional)


30g feta, crumbled

1 tbsp pepita, sunflower and pine nuts mix


1.      In a medium size bowl, add peas and beans and microwave on high for 3 minutes. Drain, then cool under cold water. Take the shells off the broad beans.

2.      Scoop flesh from avocado and place in food processor with peas, beans, garlic, lemon juice, shallot, feta and chilli flakes, and process until well combined and smooth.

3.      Place the dip in a serving dish. Garnish with feta and seed mix. Serve with crackers, bread, grissini sticks and vegetable sticks
