Chelsie’s Stuffed Zucchini

INGREDIENTS

2 Zucchini, Halved

1/2 Red Capsicum, deseeded & chopped

1/2 Red Onion, finely chopped

4 Short Cut Bacon, chopped

60g Feta, crumbed

1/4 Cup Low Fat Grated Cheese

1 Egg, lightly beaten

INSTRUCTIONS

Zucchini:

  1. Preheat oven to 200°C. Using a teaspoon, scoop flesh from zucchini halves, leaving 5mm border to make a shell. Place zucchini shells, cut side up, on a baking tray. Finely chop the zucchini flesh.

Filling:

Capsicum, Feta and Bacon

  1. In a medium size bowl, add zucchini flesh, onion, capsicum, bacon and feta and mix until combined.
     
  2. Spoon the vegetable mixture into zucchini shells. Bake for 30 minutes or until the zucchini shell is soft.
     
  3. Place zucchini on serving plates.

Bacon and Cheese

  1. In a medium size bowl, add zucchini flesh, bacon, cheese and egg and mix until combined.
     
  2. Spoon the mixture into zucchini shells. Bake for 30 minutes or until the zucchini shell is soft.
     
  3. Place zucchini on serving plates.
