Date Loaf

½ Cup castor sugar

1 cup Boiling water

1 tablespoon Butter

1 cup Chopped dates

1 teaspoon Bicarbonate soda

1 ¾ cups Self raising flour

1 teaspoon Ground ginger


  1. Place dates, sugar and butter into a large bowl. In a small bowl mix bicarbonate soda with a small amount of boiling water. Then add bicarbonate mixture and the rest of the boiling water to the dates, sugar and butter. Mix well until butter melts. Add flour and ginger. Mix well. Spread mixture into a loaf pan.
  2. Bake in oven at 180°C for 40-45 minutes.
