Spicy Cucumber Pappadums

12 Garlic Pappadams, mini

1 Lebanese Cucumber, cut into 1cm pieces

1/4 Red Onion, finely diced

1 Long Red Chilli, deseeded & thinly sliced

2 tablespoons Fresh Coriander, finely chopped

2 teaspoons Lime Juice

1/2 cup Mango Chutney, to serve

1/2 cup Low Fat Yoghurt, to serve


  1. Combine cucumber, chilli, red onion, coriander and lime juice in a small bowl.
  2. Meanwhile, cook pappadams in microwave on high setting for 60 seconds by placing on outside edge of turntable.
  3. Place pappadums on a serving platter. Top with cucumber mixture with a teaspoon of each of mango chutney and low fat yoghurt to serve.
