Turkey and Cranberry Balls

INGREDIENTS

150g Craisins (dried cranberries)

1 large Onion, finely chopped

500g Turkey Mince (or chicken mince)

1 cup dried Breadcrumbs

⅓ cup Parsley, chopped

1 Egg

Oil spray

INSTRUCTIONS

1. Preheat oven to 180°C. Soak craisins in boiling water for 15 minutes.

2. In a large bowl add mince, breadcrumbs, parsley and egg. Drain cranberries and roughly chop. Add to bowl and mix together well. With damp hands roll into golf ball size balls.

3. Add to baking pan, spray lightly with oil and cook for 30 minutes or until golden.
