Weet-bix Slice

¾ cup Caster sugar

1 cup Self-raising flour

½ cup Desiccated coconut

½ cup Sultanas

½ cup Chopped dried apricots

5 Weet-bix, crushed

1 Egg (lightly beaten)

125g Butter, melted

1 tablespoon Honey


  1. Line a 20cm x 30cm lamington with baking paper. Combine sugar, flour, coconut, sultanas, apricots and weet-bix in a large bowl. Stir in combined egg, butter and honey; mix well. Press mixture into prepared pan.
  2. Cook in moderate oven, 180°C, for about 30 minutes, or until lightly browned.
  3. Cool in pan, before cutting into rectangles.
