Baked Blueberry Oatmeal Cups

INGREDIENTS

3 cups traditional rolled oats

1 teaspoon baking powder

½ cup honey

1 teaspoon vanilla essence

2 eggs

1½ cups blueberries

 1 cup reduced fat milk

INSTRUCTIONS

  1. Preheat oven to 180C and spray a 12-cup muffin pan with cooking oil. Then in a large bowl, combine oats and baking powder.

  2. In a separate bowl whisk together milk, eggs, honey and vanilla until evenly mixed. Pour the mixture into the oats and stir until all oats are coated. Then stir in blueberries.

  3. Fill each muffin cup evenly with the oats mixture, including the liquid.

  4. Bake for 20-25 minutes until the top of the oats are lightly brown and the oats are cooked through. The interior of the oat cups should be soft.

  5. Loosen the oat cups with a spatula and remove them from the pan. Allow the cups to cool by placing them on a wire rack. Lastly, you can store the oatmeal cups in the fridge or freezer for later.
